Upon arrival, each guest is greeted with a glass of Hunter Valley Bimbadgen sparkling Semillon, setting the tone for the evening. The culinary journey begins with a shared entrée featuring Western Australian King prawns, perfectly complemented by confit garlic, gremolata, and olive oil, served alongside crusty sourdough. For the main course, guests indulge in a sumptuous six-hour slow-cooked Milly Hill lamb shoulder, accompanied by rich duck fat potatoes and a medley of seasonal vegetables, all brought together with a savory jus.
